(Not sure why I would need a cookbook in such a situation, but you get the point.) P.S. Since I love sharing recipes with ya’ll, here’s my all time favorite gingerbread cookie recipe. They are sweet, spicy and perfect for any occasion.
Makes 2 dozen cookies
1 stick organic butter
½ cup unrefined, unbleached can sugar or maple syrup
2 tablespoons blackstrap molasses
1 teaspoon vanilla
1 ½ cups whole wheat pastry flour
½ teaspoon baking soda
½ teaspoon baking powder
1 ½ teaspoons ground ginger
1 ½ teaspoons ground cloves
½ teaspoon cinnamon
Pinch of sea salt
Preheat the oven to 350 degrees. In a small sauce pan melt the butter and add in the sugar and molasses. Stir well to combine and set aside.
In a separate bowl combine the flour, baking soda, baking powder, ginger, cloves, cinnamon and salt. Mix well to make sure there are no stray chunks. Pour the wet ingredients into the dry ingredients and mix until thoroughly combined.
Scoop out about 1 tablespoon of batter and place onto a parchment-lined cookie sheet. Repeat until the batter is gone. Bake for 10 minutes then rotate the cookie sheet a half turn. Bake for another 3 minutes or until the cookies are golden around the edges. Let them cool completely on the cookie sheet before shoving them into your mouth. This part will be tough.
